Healthy No-Bake Almond-Coconut Cookies



INGREDIENTS
  1. 1/2 cup almond butter
  2. 1/3 cup maple syrup
  3. 1/4 cup coconut oil
  4. 1/2 teaspoon vanilla
  5. 3 Tablespoons cocoa powder
  6. 1/3 cup shredded coconut (unsweetened)
  7. 1/2 cup gluten-free old fashioned oats

INSTRUCTIONS
  1. Gently heat first five ingredients together in a sauce pan until oil is melted, stirring them to combine
  2. Add coconut and old fashioned oats
  3. Drop by spoonfuls onto a parchment, or saran wrap-lined cookie sheet
  4. Let cool. If your kitchen is warm, you may want to refrigerate cookies to facilitate setting up – remember, coconut oil melts at about 72º, and almond butter gets thinner the warmer it is.
  5. Store in the refrigerator for up to a week – but they won’t last that long.
  6. Enjoy!
