Slow Cooker Orange Chicken Drumsticks #chicken #chickenrecipes

I start with orange marmalade, soy sauce, red pepper flakes, fresh garlic and fresh ginger. If you have never used fresh ginger in a recipe (it’s the beige root that is pictured below) don’t worry, it’s so easy. You can see a good instructional post about how to peel and mince ginger, here. Ginger root is very cheap, but you don’t need to waste the excess, I often put the ginger root in a ziplock bag and freeze it for later.

INGREDIENTS
  1. 2 lbs. chicken drumsticks
  2. 1 cup orange marmalade
  3. 2 tsp. soy sauce
  4. ⅛ tsp. red pepper flakes
  5. ¼ tsp. pepper
  6. 1 tsp. minced ginger root
  7. 1 garlic clove minced (about 1 tsp.)
  8. ½ cup diced white onion
  9. Slow Cooker Size:
  10. 4-quart or larger

INSTRUCTIONS

  1. (note, if making into a freezer meal please follow instructions down further)
  2. In a small bowl add the marmalade, soy sauce, red pepper flake, ginger root and garlic. Stir until smooth. Add the chicken and onion to the slow cooker. Pour over the sauce.
  3. Cover and cook on high for 3.5 hours.
  4. Freezer Meal Instructions:
  5. Make the sauce as written above. Add the chicken and onion to a large ziplock bag and add the sauce, squeeze out the excess air. Place in freezer for up to a month. Thaw for about 24 hours before adding to the slow cooker. To cook, add the contents of the bag into the slow cooker, cook as directed above.
