Keto chicken club casserole




Love a traditional club sandwich? Then you'll love this mixture of chicken, cheese, and mayo, served up in a brief and creamy keto casserole. So darn tasty, you won't even omit the bread.



Ingredients


  • 1 rotisserie chicken
  • 2 tomatoes
  • 5 oz. cooked bacon
  • 1 dill pickle
  • ½ cup mayonnaise
  • 6 oz. shredded cheddar cheese
  • salt and pepper
  • Serving
  • 6 oz. leafy greens
  • 4 tbsp olive oil

Instructions


  1. Preheat the oven to 400°F (200°C).
  2. Shred the rotisserie chicken into bite-sized pieces and place in a medium-sized bowl.
  3. Dice (cooked) bacon and chop up the tomatoes and pickles. Mix all three together with the chicken. Add mayonnaise and ⅔ of the cheese and stir. Season with salt and pepper to taste.
  4. Pour the mixture into a greased baking dish. Sprinkle the remaining cheese on top and bake for about 20 minutes or until golden brown.
  5. Serve with leafy greens and olive oil.
