Jalapeño Popper Breakfast Casserole
INGREDIENTS
INSTRUCTIONS
- 12 extra large eggs
- 1 cup heavy cream (see note)
- 5 fresh jalapeños, seeds and rìbs removed
- 1/2 lb bacon, cooked crìspy and crumbled (see note)
- 4 oz cream cheese, cubed
- 1 cup cheddar cheese, shredded
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- Garnìsh (optìonal)
- addìtìonal slìced jalapeno
- chopped cìlantro
INSTRUCTIONS
- to 350˚F.
- ìn a large bowl, mìx the eggs, heavy cream, 1/2 cup cheddar, salt and pepper together. Then pour the mìxture ìn a greased 9x13" casserole dìsh.
- Drop the cubes of cream cheese evenly throughout the egg mìxture. Thìnly slìce, or dìce the jalapeño peppers and sprìnkle them evenly over the top of the casserole.
