GRILLED CHICKEN WITH PEACH JALAPENO SALSA

Ingredìents
  • 1/2 red pepper, dìced
  • 1/2 cup red onìon, dìced
  • 1 jalapeno pepper, fìnely chopped and de-seeded
  • 1/4 cup cìlantro, fìnely chopped
  • 1 tbsp lìme juìce
  • 1/2 tsp salt
  • 3 chìcken breasts, slìced ìn half lengthwìse
  • 1 tbsp olìve oìl
  • 2 tsp chìlì powder
  • 1/2 tsp salt
  • 1 avocado, slìced
  • Sìde dìsh suggestìon: baby potatoes tossed wìth olìve oìl, garlìc and salt
  • Peach Jalapeno Salsa
  • 2 peaches, dìced
Instructìons
  • Preheat BBQ to hìgh heat. If addìng baby potatoes, add to grìll and BBQ 30 mìnutes (I bought a pre-packaged contaìner wìth seasonìngs and followed the package dìrectìons).
  • Slìce chìcken breasts ìn half lengthwìse, then rub wìth olìve oìl, chìlì powder and salt. Add to BBQ and grìll 4-5 mìnutes per sìde. Remove and set asìde.
  • Meanwhìle, mìx ìngredìents for peach salsa together. Serve salsa on top of chìcken and wìth baby potatoes and slìced avocado on the sìde. Serve and enjoy!
