Cookie Bars

I love cookie bars, they are so easy to make and quick to prep. No rolling into balls or refrigerating dough. Less clean up. What’s not to love?

I also only have one rack in my little oven, so it can take me forever to bake individual cookies. While I still bake cookies from time to time, I realized a while back, cookie bars are my friend (like these Monster Cookie Bars!). They are so much easier, and recipes like these Oatmeal Cookie Gluten Free Magic Bars are a breeze to whip up.


Oatmeal Cookie Gluten Free Magic Bars
I still can’t get over how simple these were to make. The sweetened condensed milk forms this dulce de leche, caramel layer that bubbles up onto the sides and gives it these chewy corners.

The corners were my favorite part. I chose to use a 9×9 pan for these because I wanted a thicker bar. I felt like the thickness was perfect, but if you wanted to make them in a 13×9 pan, you could, they will just be much thinner. With the smaller pan, the cookie crust really stands out.

Ingredients
  1. 1 1/2 cups gluten free oatmeal cookie crumbs
  2. 6 tablespoons melted butter
  3. 1 14 ounce can sweetened condensed milk
  4. 1 cup mini chocolate chips
  5. 1 1/4 cup shredded coconut

Instructions
  1. Preheat oven to 350 degrees.
  2. Lightly grease 9 x 9 pan or line with parchment paper.
  3. Mix together cookie crumbs and butter. Press into pan.
  4. Pour sweetened condensed milk over crust.
  5. Layer with chocolate chips (reserve a few to sprinkle on top).
  6. Layer with coconut.
  7. Top with a few chocolate chips.
  8. Bake at 350 degrees for 30 minutes.
  9. Allow to cool completely before cutting
